Recipe Day

You asked and here it is .



" Bruce 's Potato Pie "



From The Recipe Book of :

"Bruce's Far Flung Terlingua Beef "

First ,

pan selection is very important : 10 " wide and 3" or less deep and must have a sealing top ! oven safe and heavy

( Round or rectangle ) I use a round pan but if not available the other will do

Prep:

You will need:

1 bunch green onions for garnish , tops only , chop before serving .

6 medium lg potatoes peeled and sliced into 1/2" slices (no thicker).

6 pieces smoked bacon thick sliced

1/2 medium to large onion sliced into1/4" slices and separated into rings (adjust for you likings)

*8 ounces sour cream

**3 inches "Kraft Velveeta" cheese off 2lb block cut into 1" pieces about 1/2 pound (no subs) let this get room temp.

*leave sour cream in fridge until 30 minuet's before cooking time is complete

Preheat oven to 250 degrees.

Assemble : (this is a layered dish)

Take 4 pieces bacon ,line bottom and sides of pan .(3 around sides and one on bottom)

add some onion over top of bacon and 1 layer sliced potatoes on top of onion. lightly salt (don't over salt)also make sure the bacon on sides stays in place while adding other ingredients !!!

repeat steps above until pan is stuffed to top. add potatoes if it dose not fill pan. add 2 tbs butter on top .

use the last 2 pieces of bacon chopped into pieces add to top . add any onion left over if any to top.

cover dish and press down if it's above the top , mine is always over the top , it will cook down .make sure the top seals , very important !

Cook:

use a piece of tin foil under pan,just in case you over stuff it

cook in oven @ 250 for 2 1/2 hours , this is a slow cook for best results

remove from oven after 2 1/2 hours carefully remove top .add **Velveeta around top , cover and return to oven for 20 minutes .* Take sour cream from fridge , and let stand on counter.

after 20 minutes turn oven OFF ,remove from oven , carefully remove top and add sour cream , cover & return to oven and let sit in hot oven for 20 minutes.

remove from oven , only open to show it off . let stand covered until ready to serve .add green onions to top before serving for presentation . this will stay warm for about 2 hours at room temp.best served after 1 hour of cooling.

Serves: 4 to 6 adults.




I have had a few that wanted this recipe ,

This is a very high calorie dish and best served with grilled or smoked meats.
